BBQ Bacon-Cheddar Chicken Burgers with Pineapple Guacamole

Ingredients
For the pineapple guacamole:
- 2 large avocados, pitted
- Half of 1, 20 oz. can pineapple chunks, drained (about 1 cup)
- 1 Roma tomato, finely diced
- 1/2 red onion, finely diced
- 1 jalapeno pepper, seeded and finely diced
- 1/4 cup chopped fresh cilantro
- 2 Tbsp. fresh lime juice, from 1 lime
- Kosher salt and freshly ground black pepper, to taste
For the chicken burgers:
- 4 Gold’n Plump Bacon & Cheddar Chicken Patties, frozen
- 4 hamburger buns, preferably brioche or potato buns
- 1/4 cup your favorite sticky-sweet BBQ sauce
- 8 fresh lettuce leaves (such as green leaf or butter lettuce)
- 1 large ripe tomato, thinly sliced
Instructions
For the guacamole:
- Remove avocado flesh from the shells and place in a medium bowl. Mash with a fork or potato masher to your desired consistency. Add the drained pineapple chunks, diced Roma tomato, finely diced red onion, seeded and diced jalapeno pepper, chopped cilantro, and fresh lime juice. Stir gently to combine. Season generously with kosher salt and freshly ground black pepper to taste. Set aside to allow flavors to meld.
For the burgers:
- Preheat your grill or grill pan to medium-high heat. Lightly coat the cooking surface with nonstick cooking spray. Place the frozen Gold’n Plump Chicken Patties directly onto the hot grill.
