Yield:
12 cream puffs

Ingredients

  • 1 cup water
  • 1 cup all-purpose flour
  • ½ tsp salt
  • ½ cup (1 stick) unsalted butter
  • 4 eggs

Instructions

  1. Preheat oven to 400 degrees F (200 C). Spray two baking sheets with nonstick spray and set aside.
  2. Combine the water, butter, and salt in a medium saucepan. Bring to a boil over medium-low heat. Once boiling, remove from heat. Add the flour all at once and stir vigorously with a wooden spoon until the flour is completely incorporated and forms a cohesive ball of dough.
  3. Return the saucepan to medium heat and continue to cook, stirring constantly for 2 minutes. This step helps to dry out the dough slightly. Scrape the dough into a large mixing bowl.
  4. With a wooden spoon or an electric mixer, beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Continue beating until all four eggs are well-mixed and the dough is smooth and glossy.
  5. Spoon the dough into 12 rounded mounds onto the prepared baking sheets, leaving some space between each puff. For a neater appearance, dip your finger into a little water and gently smooth out the edges of each dough mound to prevent small bits from burning. Bake for 40 minutes, or until the puffs are golden brown and firm. Do not open the oven door during baking. Let cool completely for at least 30 minutes before filling.
