  4. Gather the dough with your hands into a cohesive ball. Divide the dough into two equal halves. Shape each half into a round disk and wrap each disk tightly in plastic wrap. Refrigerate the dough for at least 2 hours, or up to 4 days, to allow the flavors to meld and the dough to firm up for easier rolling. Let the dough come to room temperature for about 15-20 minutes before rolling.

To roll and bake:

  1. To prepare the royal icing, combine 1 Tablespoon of meringue powder with 2 cups of powdered sugar and 3-5 Tablespoons of water in the bowl of a stand mixer. Using the paddle attachment, beat the icing on medium speed until it becomes smooth, matte, and forms stiff peaks, typically about 5 minutes. Add more water, a teaspoon at a time, if a thinner consistency is desired for outlining or flooding.
  2. Divide the prepared icing into separate batches if you wish to tint it with various food colorings. Transfer the tinted icing into piping bags or fine-tipped squeeze bottles for precise decoration.
  3. Once the cookies are completely cool, pipe your desired designs onto them. Allow the icing to set fully before storing.
  4. Store the decorated gingerbread cookies in an airtight container at room temperature for up to 1 week to maintain their softness and freshness.
