From Golden Coasts to Hill Country Heart: Our Exciting Relocation to Austin

After weeks of meticulous planning, packing, and an exhilarating cross-country road trip, we’ve finally made it to Austin, Texas! The last few days have been a delightful blur of ever-changing maps, endless stretches of pavement under the vast American sky, and a powerful cocktail of mounting excitement and utter exhaustion. Navigating our way from the familiar bustling scenes of California to this vibrant new city has been an adventure in itself, marking not just a change of address, but a profound shift in lifestyle. Tomorrow, the boxes will begin to find their place as we officially move into our dream house, a sanctuary we’ve envisioned for so long, and our spirits couldn’t be more buoyant. This truly feels like the beginning of an incredible new chapter, and the happiness bubbling within us is simply irrepressible. Hooray!

However, before we dive headfirst into unpacking and exploring, a good night’s sleep is paramount. My current ambition is simply to collapse right here, on my laptop keyboard, and drift off into a deep, restorative slumber. The road has demanded much, and the thrill of arrival has consumed every ounce of energy. A moment of peace and quiet, even if it means resting my head on the keys, sounds like absolute bliss. Okay, thanks. Zzzzzz… The adventure continues after some much-needed rest.

A Fond Look Back: Cherished Memories of Los Angeles Living

Making the move to Austin, a city we’d only briefly encountered but quickly fell head over heels for, has been an intriguing journey of discovery and introspection. It’s funny how a new beginning often brings a sharper appreciation for what’s been left behind. While our hearts are set on the future here in the Texas Hill Country, there are certain irreplaceable elements of our Los Angeles life that we will forever hold dear. The Golden State left an indelible mark, and we cherish the unique experiences it offered.

Among the most vivid recollections is the breathtaking panorama of the vast, flat cityscape stretching out from the majestic Griffith Observatory. From that elevated perch, the urban sprawl of Los Angeles transformed into a glittering constellation of lights, an awe-inspiring testament to human endeavor under the expansive California sky. It offered a unique perspective on the city’s scale, beauty, and endless possibilities. Then, there was the undeniable allure of Hollywood – a world of unparalleled glitz, enduring glamour, and absolutely fantastic people-watching. Every visit promised an encounter with a diverse array of characters; you’d invariably find more than your fair share of fascinating individuals, each contributing to the vibrant, eclectic tapestry that defines Hollywood’s unique charm. Whether it was a celebrity sighting or just an ordinary person with an extraordinary story, the sheer energy was captivating.

And oh lordy, those iconic Pacific Coast beaches! They were a constant source of inspiration and tranquility. Imagine endless stretches of gorgeous white sand, soft underfoot, meeting the powerful, strikingly blue surf of the Pacific Ocean. The rhythmic crash of waves, the salty breeze, the expansive horizons – these were daily luxuries that now exist as cherished memories. Beyond the beaches, California’s natural beauty extended into a riot of colors. We recall the blossoming flowers, some meticulously cultivated in sprawling gardens, others growing wild in vibrant tangles of hot fuchsia along the winding side roads. These blooms, often as big as your head, added a spectacular splash of color to the landscape. And let’s not forget the farmers’ markets – bustling hubs brimming with lovely looking people, an incredible abundance of nature’s bounty, and a rainbow of fresh, colorful vegetables and fruits. These markets were more than just places to shop; they were vibrant community spaces, reflecting the healthy and dynamic spirit of California living.

A Fresh Start: Embracing the Warmth and Charm of Austin

But, with open hearts and eager minds, we have consciously given up all of that and more for the promise of where we are now, and the beginning couldn’t look brighter! Austin represents a new chapter, a fresh canvas, and a different rhythm of life. The suburbs of Austin, where we’ve chosen to lay down our roots, exude an immediate sense of peace and quiet. This tranquility is a welcome change, offering a calm respite from the ceaseless motion of city life. The streets are lined with mature trees, the air is often filled with the gentle hum of nature, and there’s a palpable sense of community that makes every day feel welcoming.

What truly defines Austin, however, is the genuine warmth of its people. Southern hospitality is not merely a cliché here; it’s an ingrained part of the culture. From friendly greetings in the grocery store to helpful neighbors, there’s an immediate sense of belonging. And yes, “warmer thermostats” isn’t just about the delightfully sunny climate, which Austin has in abundance; it also speaks to the inviting, comfortable, and less demanding atmosphere that permeates daily life. When we do feel the urge to “gussy up and go out,” a phrase that has quickly become part of our new lexicon, the vibrant heart of Austin is just a quick and easy car ride away. The city proper offers an incredible array of live music venues, world-class dining, eclectic boutiques, and a unique “Keep Austin Weird” ethos that celebrates creativity and individuality. It’s the perfect blend of small-town charm and big-city amenities.

While the Pacific is no longer our immediate neighbor, Austin boasts its own stunning natural beauty and recreational opportunities. Beautiful lakes and rivers, perfect for swimming, boating, and paddleboarding, are just a short drive away. And for those craving the expansive coastline, the Gulf Coast beaches are a delightful road trip adventure, offering a different but equally captivating seaside experience. Spring in Texas brings the iconic sight of beautiful bluebonnets, blanketing fields in a breathtaking display of nature’s artistry. Breezy trees, offering ample shade and a gentle whisper in the wind, are sprinkled generously all around, creating picturesque landscapes and inviting outdoor spaces. And much to our delight, Austin maintains a vibrant farm-to-table culture, evidenced by a handful of fantastic weekly farmer’s markets where we can pick up local, fresh fruits, vegetables, and artisanal products, directly supporting our new community and fostering a healthier lifestyle.

As we settle into this wonderful new rhythm, the kitchen has quickly become the heart of our home. When I have the chance to stroll through these delightful local markets, a big bag of fresh zucchini is invariably at the top of my list. I’m eager to make these delicious baked fries with them again – a recipe that has become a staple for us! They are incredibly flavorful and wonderfully crispy, surprisingly easier to perfect than traditional potato fries, and offer a truly tasty way to ensure both you and your family get a healthy serving of vegetables without any complaints. With just one dip of a warm, golden zucchini fry into some creamy Ranch dressing or tangy marinara sauce, you’ll instantly understand how addictive they can be. And in a beautiful, mirroring sentiment, Austin is rapidly becoming just as addictive and beloved to us!

Crispy Baked Zucchini Fries - a healthy and delicious snack or side dish

Perfectly Crispy Baked Zucchini Fries

Yield:
6 Servings

Ingredients

  • 3 medium zucchini, preferably firm and fresh, sliced into uniform skinny sticks (about 1/4-inch thick)
  • 2 large eggs, lightly beaten in a shallow bowl
  • 3 heaping tablespoons all-purpose flour
  • 1/2 cup breadcrumbs (Panko breadcrumbs are highly recommended for extra crispiness)
  • 2 tablespoons grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to a robust 425°F (220°C). Lightly spray a large baking sheet with cooking spray or line it with parchment paper for easy cleanup and to prevent sticking. Set the prepared baking sheet aside.
  2. Prepare your dredging stations: In a small, shallow bowl, beat the eggs vigorously with a fork until they are frothy and well combined. In a second shallow bowl, place the all-purpose flour. In a third, wider bowl (or a resealable plastic bag), combine the breadcrumbs, grated Parmesan cheese, and garlic powder. Stir these dry ingredients together thoroughly until well mixed. Season the breadcrumb mixture lightly with salt and pepper to enhance the flavor of your fries.
  3. Begin the breading process for the zucchini sticks: First, dip each zucchini stick into the flour, ensuring it is lightly and evenly coated on all sides. Gently shake off any excess flour. Next, transfer the floured stick into the beaten egg, allowing any excess egg to drip off naturally. Finally, thoroughly coat the stick in the seasoned breadcrumb mixture, pressing gently to ensure a thick and even layer of crumbs adheres to all surfaces. Carefully place the breaded zucchini sticks in a single layer on your prepared baking sheet, ensuring they do not touch each other. This spacing is crucial for optimal air circulation, which results in maximum crispiness.
  4. Bake at 425°F (220°C) for approximately 20 minutes, or until the zucchini fries are beautifully golden brown, wonderfully crispy, and cooked through. Cooking time may vary slightly depending on the exact thickness of your zucchini sticks and the calibration of your oven, so it’s advisable to keep a close eye on them during the last few minutes.
  5. Serve these delectable fries warm immediately after baking. They are absolutely fantastic on their own as a healthy snack, but truly shine when paired with your favorite dipping sauce such as creamy Ranch dressing, savory marinara sauce, a tangy Greek yogurt dip, or even a spicy homemade aioli.
  6. Enjoy this healthy, crispy, and utterly satisfying snack or side dish – a perfect addition to your new, vibrant Austin lifestyle!
